Tea Loaf

Ingredients

  • 1 Cup of sultanas,
  • 1 Cup of soft brown sugar,
  • 1 Cup of Cold tea,
  • 2 cups Of SR flour, (If you don't have Self Raising flour, follow THIS LINK for a DIY alternative.)
  • 1 beaten egg
  • milk to mix

Method

  • 1. Mix sultanas, sugar, and cold tea in a bowl,
  • 2. Cover and leave to soak over night,
  • 3. Add egg and flour and a little milk if needed to make a fairly thick batter,
  • 4. Bake in a greased 2lb loaf tin, lined with greaseproof paper for about 1½ hours at 375 F.
  • 5. Turn out and cool on wire rack.

Note

This one is always half eaten before it's cold !
